Saffron, the most expensive spice in the world, was first grown in Greece and then spread to the Kashmir valley. Since then, Kashmir has become a hotbed for harvesting the best and most expensive saffron in the world. The high cost of this exotic spice stems from the fact that one kilogramme of saffron requires more than 1,50,000 crocus flowers. Saffron costs around INR 1,80,000 ($3,000) per kilogramme on the market. Crocus is a purple flower with a lush scent that travels from the snow-capped mountain valleys of northern India.

The exotic Mono floral honey is the second product from Keynote International’s gourmet collection that I tried and enjoyed. I had the pleasure of sampling Acacia and Raw Ajwain flavours from their exotic and rare honey collection. This is what distinguishes this wild and boutique honey. It’s mono-floral honey, which is extremely rare! Mono-floral honey has a distinct flavour because bees primarily feed on the nectar of a single plant species. Keynote International provided me with genuine raw honey.

The crystallisation of raw honey is a common way to identify it. The honey’s glucose-to-fructose ratio determines whether it will liquefy, crystallise, or remain in a semi-solid colloidal state over time. It’s best to eat the crystallised honey straight from the jar. Honey from Keynote International contains no added sugar or antibiotics. Neither the bees nor you are being force-fed sugar syrup! Raw honey from Keynote is not homogenised or pasteurised.

Keynote’s honey is not heat-treated. The honey is directly transferred from the beehive to the bottle. All of Keynote’s honey is processed to the bare minimum. As a result, it may contain microscopic amounts of hive wax debris and bee pollen.

Passionfruit Concentrate

Passion fruit is a superfood that is high in fibre, iron, vitamin B6, B3, C, and A. It got its name from its purple flower, which 16th-century Spanish Catholic missionaries thought looked like Christ’s five wounds. Passion Fruit is a passionate favourite among food connoisseurs, as its name suggests. The Keynote International Concentrate I received retains its aromatic tart and tropical flavours in their natural state. Passion Fruit concentrate can be used to make sorbets, cocktails, mousses, and much more.

Alphonso Mango Pulp

This was a pleasant winter surprise! If you’re a mango fan, you can’t pass up the opportunity to enjoy mango puree during the off-season. Especially since the pulp I received was free of artificial colours and preservatives. Keynote International’s Mango Puree comes in an 850 g tinned can and contains the pulp of nearly 15 Alphonso mangoes. This mango puree is low in fat and contains only about 3% added sugar, and is high in vitamins A, B, and C.

There are no artificial flavours or thickeners in this recipe! This is why it has the same flavour as a freshly pulped Alphonso mango. I’ve been eating this thick, creamy tropical fruit puree with yoghurt, but it’s also delicious in sorbets, milkshakes, ice cream, cakes, soufflé, mousses, pies, and other desserts.

Gulkand by Keynote

Gulkand by Keynote International is an Ayurvedic legacy in a glass jar. No one captures the true essence of Damask roses like Keynote, from age-old preparations like sun-cooking and long curing to combining the Gulkand with Praval Pishti. Slow sun-cooking is a lossless process that keeps the rose petals’ delicate compounds intact. The method entails slowly and gently concentrating rose petals. Praval Pishti, on the other hand, is Coral Calcium with Rosewater conditioning. It’s a calcium-rich natural ingredient.

Keynote International Gulkand

When Praval Pishti is combined with Gulkand, it can help with eye rashes, hyperacidity, and prickly heat, among other things. The preserve tastes like caramelised roses and is perfect for making a rose-based dessert or simply enjoying tea, coffee, ice cream, or sorbet.
