Revel in FBrunch at Indore Marriott Kitchen

On my most recent visit to my hometown, Indore (or as they fondly refer to it as mini-Mumbai), I was invited to experience a remarkable surprise – the all-new Junior Suite at Indore Marriott Hotel. To add to that, I got the chance to feast at each of their restaurants, with the last course of my stay being served at the Indore Marriott Kitchen. Not only was I taken aback by the modern yet folkloric ambience of this all-day dining restaurant, with its elegant tones of coffee and cream, but I was also delighted to see the sophistication blended with creamy backdrops. Truly, my visit to Indore had introduced me to a fascinating new debut!

On a Sunday, Indore Kitchen was alive and vibrant, ready to host the city’s most fun Sunday brunch, fondly known as ‘FBrunch’ – where the F stands for Nothing but Fun! The brunch was truly extraordinary, with a clay oven integrated into the kitchen peninsula, and a minimalist spectrum of uncluttered, chafing dishes made of silver and copper. To add flair, there were also LIVE food counters and musical performances that everyone venerated.

My romantic rendezvous with Indore Kitchen began with a tantalizing twist – Lemongrass infused Martinis served in stemless funnel glasses, held by a jar of ice cubes and basil. Jitu, our master mixologist, shared his wisdom on how to keep a Martini cool for up to an hour – a trick I was sure to remember! As I savored every sip of the Martini, my nose was infiltrated by the delightful aromas coming from the open kitchen. It was then that I knew I had to savor more than just the cocktail!

My mouth was watering as Executive Chef Vivek Kalia lavished us with a cornucopia of appetisers; from a delightful popcorn Bhel platter to succulent pork ribs and delectable lamb chops, to tantalising shrimp bruschettas, flavourful baked Potli Fish, crunchy Dumplings and much more. For the main course, I indulged in a hearty platter of Nigri Sushi. After we had finished our meal, the Executive Chef joined us for a brief conversation and it was here that I learnt that his childhood dream had never been to cook, but to do something creative – until he stumbled upon hotel management.

He was enamored with cooking even during his first year of hotel management program. With his creative flair, he transformed the ordinary comfort food into a culinary masterpiece, with the fancy popcorn Bhel as a shining example. Taking inspiration from Chef Thomas Keller and Gordon Ramsay, Chef Kalia loves to continuously push the boundaries of his imagination and innovate with comfort food. His journey is proof that with passion and creativity, you can achieve anything!

My FBrunch ended with a magical chocolate experience that was simply out of this world! From oven-baked chocolate shells to sprouting frozen rainbows, the dessert spread was beyond delightful. I absolutely adored dining here and I’m already counting down the days until I get to treat myself to another meal at Indore Kitchen.
