Chef Chet Singh: An Asian Cuisine Specialist

A few days back, we checked on a pastry chef at Indore Marriott, and today, we are meeting the Asian cuisine specialist – Chef Chet Singh. He hails from Nepal and keeps a keen interest in authentic Asian and oriental cuisine. Born to Mr Rakesh Singh (father) and Mrs Bhima Devi Singh (mother), Chef Singh reveals that his inspiration for cooking comes from home. His father, Rakesh Singh, was an oriental chef; and that’s how Chet Singh grew up watching and learning culinary tricks and techniques.

Also, he took an interest in Asian cuisine because his father cooked delicious food. When asked about his favourite food, Chef Singh asserted that he enjoys Dimsums, sushi, noodles and roast pork the most. Today, chef Singh cooked for me gratifying Hakka style Kings Prawns with braised leeks. And we spoke about his culinary journey as we ate.

1: What is your favourite food?

A: Chicken Sui Mai

2: Why did you choose to become a Chef?

A: Cooking is my ultimate passion, and I aspire to become a celebrity chef someday.

3: What is your favourite cuisine to cook?

A: Chinese, I’d say! I want to be known for my contributions to Chinese culinary and pursue it as my prime specialization.

4: Give me an example of a meal you would prepare for me?

A: I would cook you a Cumin Lamb. It’s a classic Xinjiang dish with bold, spicy flavours.

5: What do you do to guarantee the quality of the food going to customers?

A: I assure, that the meal is prepared following high standards of hygiene while, keeping in mind the guest’s dietary requirements.

6: Tell me three things that you consider to be your strengths?

A: First, I’m good at multitasking, and you will always find me working simultaneously on soup, dim sum and the Wok. Second, I well-understand guest preferences, and third I’m good at situation handling.

7. How much do you love cooking?

A: “Most people eat to live or live to eat, I cook to live or live to cook,” says chef Chet Singh.
